Downloaded the new El Capitan and now HP 6700 cannot save scanned documents
MacBook Pro (15-inch 2.53 GHz), OS X El Capitan (10.11)
I have the same issue with my HP 4370 scanner.

It appears that HP has not updated their drivers for your scanner for v10.11 El Capitan compatibility. Only support for v10.9 Mavericks and v10.10 Yosemite here.
An alternative would be to try the Image Capture app in your Applications folder for scanning.
