Is it possible to opt for a monthly statement or summary of all iTunes purchases rather than receiving multiple emails for every purchase?

No, you can only receive emails per purchase (if you do purchases close together you may get just the one receipt listing them), you can't get a monthly version
You can view your account's purchase history via your computer's iTunes if you want to see a full list of purchases : See your purchase history in the iTunes Store - Apple Support

Monthly summary, no. But you can see a chronological list by going into your Purchase History. (Store > View Account, and log in.)
