Downgrading is difficult. The first step is that you need TWO Trusted Backups of both your Mac OS X stuff AND your Windows stuff, because you will need to completely erase your Disk. It will likely be easier to just fix the problems you encountered and move forward.
You will likely need to make certain you have the correct version of Parallels for El Capitan.
