My phone has started downloading all my photos and videos from iCloud out of the blue, photos and videos i have previously deleted off my phone are now appearing on my phone when it syncs to my computer. How can I stop this?

You activated iCloud Photo Library. It works by giving you access to all your images. You really need to read about it on Apples website or on Mac-centric websites, such as iMore.com.
To disable: Settings > Photos & Camera > iCloud Photo Library > OFF

I have turned out off but now all of the photos have disappeared from my phone. Is there any way to get my phone back to how it was before iCloud Photo Library spontaneously turned on?? So frustrating!
In Settings > Photos & Camera > turn ON Upload to My Photo Stream.
