I just bought an iTunes gift card and want to use it on my both my iPhone and Mac, both with the same apple ID. So if I redeem the gift card on my iPhone, will the balance also show on my Mac App Store?

Yes, it will show wherever you use that account (iTunes, App Store, Mac App Store, iBookstore)
