Okay, so apparently while trying to update her mac and install Yosemite, my mom did Disk Utility -> Erase and lost her Admin User file. I'm not a mac expert, so can someone give me advice on how to help her restore her lost files when I see her tomorrow? Is it possible?

The user data should be backed up in your Time Machine backup. I cannot tell you exactly what to do as you have given no info on your Mac or what version OSX you are running.

I believe she has a OSX 10.8 Mac Mini. I've no clear idea of what she did, but the whole incident had something to do with El Capitan and trying to downgrade to Yosemite??
Hopefully she keeps a backup of her system or at least her data. I would restart holding down the Command and R keys and choose the Reinstall Time Machine Backup option from the most recent backup.
