The Mac Mini's (late 2012) Thunderbolt/MiniDisplay Port output supports up to 2560x1600, is it possible to use this monitor? Obviously the Mac minI won't output 4K into this 4 K monitor, but I'm wondering if the monitor will display 2560x1600. Thanks.

Yes, it will work. You may not get exactly 2560x1600 but maybe 2560x1440 or similar depending upon the specific monitor and aspect ratio.
