I work at a computer company where we have 3 iMac's. We have 2 -21" and a 27" with a graphics issue. I was wondering if i can take the graphics card from the 21" and use it into the 27" if the year models are correct

No, that will not work. The 21.5" & 27" iMacs use totally separate parts. You will need to get a replacement GPU (the same as what came installed in the computer) at your local Apple Store or Apple Authorized Service Provider. If you don't know any AASPs in your area please click https://locate.apple.com/country to begin finding one.
