How do I go back to normal in iOS 9?

I'm glad I'm not the only one iOS 9 has driven batty. I'd like to change some of the things they wrecked in iOS 9.

* Keyboard - I don't want the lower case letters, I want upper case. Please.

* Game Center - PLEASE make it go away! I have no use for it, and it's screwing up every hand of solitaire I play.

* Emojis - how about some new ones? I've been using these for years.

* Photos - please stop rearranging my albums. They were great is Alphabetical order. Oh, and stop making new albums for iOS junk. I don't need Events or Faces.

If anyone has a solution to these issues, I'd appreciate hearing it.
