Organize pictures before or after taking...tags, album, other ideas?

Does anyone know of an app that allows u to sepcify a folder/album or tag either right before or right after u take a photo from the camera screen?

here's the problem i am trying to solve.

For example, when I go to walmart if i see a few gift ideas i want to snap some pictures. A few months later when I upload all our photos, these gift pictures, document photos, landscapes, etc are all mixed in with family pictures. I am trying to figure out some way to organize as i go so i am not stuck with 1000 mixed pictures. Thanks!
