I changed countries but can't use iMessage now because it won't unlink the old phone number. I've tried turning off iMessage and FaceTime, but when I turn them back on, I see the old number with a loading icon next to it; also tried changing my phone number but it's just not working. What can I do?

First, de-register your former telephone number with iMessage:

Then, register your new iPhone telephone number:

The problem is that I'm not in the US anymore, so I'll never receive the text with the confirmation code in order to de-register.
