How do I move all of my "stuff" from a iPhone 5s to a new iPhone 6s (128GB) WITHOUT using the cloud.

A:

Connect the iPhone 5s to the computer and use iTunes to create a backup. After that, connect the iPhone 6s to the computer with iTunes, restore the backup of the 5s to the 6s. All done. Transfer content from an iPhone, iPad, or iPod touch to a new device - Apple Support

Nope, it will pick up the name from the old device when you restore that backup. If you want to change the name afterwards you can, go to Settings>General>About>Name.

Nope, it will pick up the name from the old device when you restore that backup. If you want to change the name afterwards you can, go to Settings>General>About>Name.
