I want to add a sender email address in Mail, and I'm familiar with the solution to add email addresses in the email address field to the right in the accounts tab. But I'm using an iCloud mail and this field is greyed out, so it doesn't allows any edits.
Any help much appreciated!

If you want to add an alias, use the alias drop down menu and choose the edit option.

This method allows you to create an alias in iCloud but you can't add an email address with a com or dk extension only iCloud extensions are permitted.😟
Then I'm not sure what you are trying to do, you can't add addresses that aren't iCloud addresses as a sender for an iCloud account, you can't do that for any account. If you have a abc@123.dk address you need to set up an account in mail for it, you can't simply add it as an address to an existing account.
