El Capitan Preview undo fails after desaturation

I desaturated an iPhone photo in Preview and immediately tried Cmd-Z. Can't undo that edit; didn't work. No other image "versions" available from the title bar dropdown.

MacBook Pro (Retina, 13-inch, Late 2013), OS X El Capitan (10.11)
