About Wi-Fi Assist - Apple Support
As it says: "When Wi-Fi Assist is activated, you will see the cellular data icon on the status bar on your device."
So you can determine what happens when a stronger signal becomes available.

The question was, will WiFi Assist switch back from cellular to wifi when a stronger wifi signal is again present?
