Photos should be save on computer like any other digital camera.
You can do the backup as well as import all your photos from old iPhone again to computer.
Which computer are you using? Windows or Mac?

I bought an iPhone 6s two weeks ago. I have been taking photos with it etc. I just received my iphone 5s that I have previously been using and I backed it up, I have plugged in my iPhone 6s to my Mac previously but it never connected to itunes because i didn't have the updated itunes that was compatible with iPhone 6s. so the first time I connected my 6s to itunes I restored the back up from my 5s.
so does this mean I wont be able to retrieve the photos etc that were previously on the 6s before I restored the back up?

See in Settings > General > About > Name
If it's different than your iPhone 5s, you should still have your iPhone 5s backup, iTunes can tell the differences between the 2 and will not overwrite.
When you connect your iPhone 5s to the Mac, use Mac Photos or Image Capture app to import all your photos.
On your iPhone 6s, select those photos you want on Mac and sync it over to your 6s with the 6s connected and selected.

On computer iTunes > Preferences... > Devices > what backups do you see there especially the date and time of the backups?
Maybe you still have the iPhone 6s backup.
You have overwritten the iPhone 6s data with iPhone 5s backup but the 6s backup before you restore from 5s might still be there.
