How do you change the cover photo of an album or "face"?

Not sure if it is actually possible... But I have been dying to know this.

When you click inside an album and there are more albums they all use a random cover photo it seems. I would love to be able to change this. Same with the faces. It seems those used the first photo you assigned under that name.

Any ideas?
