From time to time someone forgets the password they gave for an encrypted backup. This usually happens when they are trying to transfer their information to a new iPhone.
Is it possible to delete the current backups (I know we can do that via Preferences) and then do a new encrypted backup. I don't care if it must be done on another computer even. I just want the user to make a new encrypted backup with a new password so they can restore to a new iPhone.
The thing you can do is restore the phone as new.

What I want to do is to just ignore those other backups and start anew. Maybe that is not possible?

No, if they can't remember their password for their backup, then they can't use it. So they will need to set up their new phone as new as they can't use their backup.
Yes user will lose all their data if they restore as new.
