I am creating a book in iPhoto. It is putting a default copyright logo with my name under every caption of every image. It appears to be editable but when I click on it iPhoto quits! How can I either remove this text completely or edit the text?

As a test launch iPhoto with the Option key held down and create a new, test library. Import some photos and test to see if the same problem persists. Does it?
If it doesn't crash then your current library is damaged and needs repairing. In that case do the following:
1 - launch iPhoto with the Command+Option keys held down to open the First Aid window. Be sure to follow the circled recommendation in the screenshot.
2 - apply Option #4, Rebuild Database.
