Apple Watch measures your heart rate:
- Every 10 minutes as long as neither you nor your arm are moving (a resting heart rate).
- Continuously during workouts (start and end workouts via the Workout app on your watch).
- Use the Workout app on your Apple Watch - Apple Support
If your watch is pausing workouts before you have finished them, this may be due to your watch having lost contact with your wrist, causing it to conclude that it has been removed. This will cause the Workout app to pause automatically. During exercise, Apple Watch should be worn snugly on the top of your wrist. Apple suggests that you consider tightening your band before workouts and loosening it again afterwards. More information:

Also: to avoid accidental interactions with your watch's screen during workouts - which may include pausing workouts or ending them early - you can lock the screen. At any time after starting a workout, press firmly on the display and tap on Lock. When you are ready to end the workout, press firmly again and first tap on Unlock.

In terms of snugness, if I tightened it any further I would be cutting off circulation. Looking at various postings I would say the issue is widespread. If not, perhaps I have a faulty unit.
