I find it very upsetting that Apple has added a new middle finger emoji to its collection;
what a degradation to its value and reputation;
how do I delete it from my Apple devices?

You can not remove Emojis. You can let Apple know your feelings at the link below.
The collection is not the doing of Apple, it is from the support of Unicode versions. They have just updated what versions they support. The design and implementation of particular emoji are based on the Unicode standards. You cannot remove individual emoji from your device. You can delete the emoji keyboard if desired.
