You should be able to click on the card in the wallet to open the card, and in the bottom right-hand corner you will see an button. Click on that, and you should see the option to Delete in the upper left-hand corner.

How to delete a card from Apple Pay on iPhone and iPad

Launch the Settings app on your iPhone or iPad that contains the Apple Pay card you need to delete.
Tap on Passbook & Apple Pay.
Tap on the credit card you'd like to delete.
Tap on Remove Card — you'll need to scroll all the way to the bottom.
