Sorry to hear that you got billed for Apple Music even though you have turned off the subscription. Let's see if we can get this sorted out.
The first thing I would check is to ensure that Apple Music membership renewal is turned off. Take a look at the first article to navigate to your Apple ID profile to turn of your subscription or any other subscription that you may not want.

If you are still being billed for this after it was canceled, then I would recommend reporting the issue to the iTunes Store. You can do that by following the steps outlined in the next article that will have you log in and view your purchases and report the issue.
