When typing on a PDF, I used to be able to click anywhere on the pdf and begin typing my notes. Now i have to create a text box and move it with the track pad where I need it. How do I go back to just clicking and then typing immediately?

In PDFs, as far as I'm concerned, is not like a document. You can just consider them as images. If you want to edit it, copy all the data that is written on the PDF and paste it on a Pages document, Words, Google document, etc.

PDFs are not for editing like a document, to clarify.

Although you exclude the version of OS X that you are using, the current Preview in El Capitan does not provide direct text input, and as you observed, wants a Text box from the markup toolbar. On the otherhand, if you were using Adobe Reader 11.0.13, you could click on the Comments toolbar item, and choose the 'T' item in its toolbox. This will allow you to directly enter (comment) text on your PDF.
