I am not really wanting to download the new Mac software update, El Capitan. It appears that those who have, are not real happy. Why should I download this update? I do not need or want any software issues.

If you do not want the new features of EC then do not upgrade to EC.
I'm satisfied with El Capitan, so now you know at least one person who is. The thing you need to bear in mind is that these forums are like a hospital emergency room. You're only going to see people in here who have problems. The ones who aren't are like the doctors and nurses, trying to help everyone else. You also need to remember that the people who post here, either because they have problems or because they want to help those who do, are but a fraction of the overall populace that has downloaded El Capitan. You can't gauge whether or not you should upgrade your OS by what you see here. You can't predict whether or not you'll have issues because your system is not the same as someone else's system.
That said, if you don't want to download El Capitan, then don't. No one is putting a gun to your head.

I am extremely happy with 10.11.1 I have had no issues.
It is always advised to a current backup plan. In this way you can always fall back if you deem it necessary after an upgrade or update.

No one is forcing you to do upgrade to El Capitan.
I disagree with your comment, "It appears that those who have, are not real happy." So far I have no problems with El Capitan and I very much satisfied with the upgrade. For me it appears to be Yosemite but finished.
But Apple sometimes nags you with a windows that says El Capitan is available.
I realize that I do not have to download EC. But Apple will not leave you alone until you do. I have always felt I need to download the updates. For some reason I could not download Yosemite. I have not tried to download EC. I will download it now that I see that there should not be any issues. Thanks for your input.
Thanks for your input. I know that I do not have to download EC. It is annoying with all the reminders until you do. I have always believed in keeping up with updates. I tried to download Yosemite several times and it would not go. But I will try EC and see what happens. Thanks for your help.

I have tried to download Yosemite several times since it came available and could not get it done. But, I will go ahead and try to download EC. Thanks for your advice and help.
You can selectively disable notifications about specific software updates you don't care about.
Open App Store
Under Updates tab, Control-Click (Right-click) on the update you want to hide and choose "Hide Update".
If you decide later you want to download, under Store in the Menu barselect "Show all Software Updates".
I have not found anyone who is satisfied with El Capitan. I do not want to download it.
