Q: how do i back up a different phone on the same computer?

I would like to create a backup on iTunes for my wife's phone. I already use iTunes for backup of my phone. How do I back her phone up with her data only - not mine.

Connect her phone instead of yours and choose back up now within the iTunes tab for the connected phone. Each phone should have its own name and identity. If you look at your iTunes preferences under devices you should see a separate backup file for each of your iPhones. The other way of doing it would be to switch to iCloud backups and your iPhones will backup daily to Apples iCloud servers when they are connected to wifi and plugged in for charging.

I would do this a different way:

Create a different user account on your computer (Mac or Windows) with your wife's own username and password.  Run iTunes on her user account to handle her iOS devices, and your iOS account to handle yours.  This will absolutely prevent intermingling of apps, music, etc.  It would be as if you and your wife each had your own computers.
