I have a old cell phone number stored in iCloud setting.
As soon I want open key-ring, it'll ask me for the code. I enter the code, then it sends me the 6 digit authentication number to the cell number, which I do not have anymore!!
How can I chance cell number in iCloud/ key ring without getting every time into this trap??

You can only change the number once you are successfully in the Keychain. Get help using iCloud Keychain - Apple Support
In your case, if you cannot receive the verification code and you do not have another device already logged into iCloud Keychain that you can approve from, then you will need to choose the option that says forgot code. This will allow you to reset the keychain.
