It sounds like your Apple TV isn't resetting the network information like it should and I understand you don't want to have to restore it with iTunes. What I would do is restart the Apple TV in this manner:

For Apple TV (3rd generation and earlier), go to Settings > General > Restart.
Then restart your router and try again. That should get your Apple TV to reset the network information for you as you are trying to do.
