Each email account provider has it's own SMTP server.

Absolutely correct.
you won't be able to use just one to handle different e-mail accounts.
It turns out Mac Mail is highly configurable, and, in fact, with a little work you could use just one SMPT Server for all sending. This is not the way most people use it, but it could be done that way.
You might set it up that way to encourage your corresponders to switch to a new incoming Mail Account while you worked on phasing out an old one that you intended to discontinue.

Typically the sending SMTP server verifies the domain that you are using to send the email and only accept messages sent with their domain in the address.
For example, an email from joe@google.com can not be sent via the Apple SMTP iCloud servers. The Apple SMTP iCloud servers will only accepting sending addresses of .mac, .me, and .icloud.
