I can't imagine that Apple would guaranty the information would be unrecoverable. The only way to insure that is to destroy the drive.

Are you asking about the Erase all content and settings in the iPhone (since you posted in the iPhone forum), or the Secure Erase on a Mac? I'll assume you mean on an iPhone; Mac OS X the answer is very complicated.
All iPhone content is encrypted using very strong encryption - so strong the FBI wants to stop Apple from using it. The encryption key is generated from your passcode plus other information specific to the phone, such as serial number (the details have been published somewhere, but I can't find it quickly). If you choose Settings/General/Reset - Erase all content and settings iOS overwrites the encryption key, thus scrambling the contents. This is as strong an erase as the original encryption was. However, there is no such thing as unbreakable encryption if you have enough time and computing power (think NSA), so it is not possible to "guarantee" anything when it comes to data security.
