That would be to set NVRAM and SMC.

It can be done with one hand. It's just a stretch if you have small hands.

You are referring to resetting NVRAM (or PRAM--that's where the "P" and "R" keys originate).
Only way I can think of doing that with one hand is to shut down the Mac, then tape the keys down or use something to wedge them down, then press the power button. Once you've heard the tone a couple of times, remove the tape on the keys.
I imagine you would only need to wedge down the p and r as pressing cmd+opt can be done easily enough.
