Apple WatchHi
Apple Pay does not provide e-receipts. If you would like to receive a receipt when paying in store, request one when making your purchase, just as you would do if you were instead paying directly by debit, credit or store card.
All approved transactions will be reflected in due course on your card / account statement, provided by your card issuer.

Apple WatchTo clarify - the reason for this is that Apple Pay has strong privacy measures built-in.
For example:
- If you pay in a store, Apple doesn't collect any transaction information that can be tied back to you (if Location Services are turned on, Apple may receive limited anonymous data).
- If you pay within an app, Apple Pay only retains anonymous information (which doesn't even include the exact purchase amount).
"With Apple Pay, your payments are private. Apple Pay doesn’t store the details of your transactions"
