Can someone walk me through the process of purchasing a book on iBooks as a gift for someone and paying using my iTunes gift card balance?

You can't use your balance for gifting, that can only be used to buy items for your account - you will need to have a credit card on your account to gift something.

To gift the book, click on the downward pointing arrow next to the book's price button : Send iTunes Gifts - Apple Support
