I set my sister up for home sharing, but it has her as a child and she is an adult. How do I change her ID to reflect that she is an adult?

I assume that you mean family sharing, not home sharing (?). If the date of birth on her account has her as a child (i.e. under 13) then you won't be able to change it : Update the birth date associated with your Apple ID - Apple Support
Be sure to enter your correct birthdate. After you change it to any age below 13, you can't edit it.
