I understand you just setup your Gmail accounts in System Preference yet you don't see them within Mail.
Your Mac details show you are running El Capitan (10.11). I see the update to OS X 10.11.1 may help.
- Resolves an issue that prevented display of messages and mailboxes in Mail.
If that isn't it, please check the relevant article in Mail (El Capitan): Mail troubleshooting.

I know I can delete the accounts from System Preferences/Internet Accounts, and then add them again to mail, but I should not have to. I prefer to figure out the problem and resolve it properly.
BTW, I did delete one gmail account from Internet Accounts, and then added it back in Mail successfully. Although, it did take a couple seconds for the account the show up - there was quite a bit of "blinking" in the accounts pane before and after the account was displayed. Kind of weird.
Any other suggestions?

As deleting and re-adding the gmail account is off the table I'm not sure where to go from here. You can't select the mailbox to rebuild it as you can't see it.

Dec 1, 2015 3:54 PM in response to Gary Sumlakby Grant Lenahan,As i recall from someone else who had this problem, it occurs because of a bad assumption made on the part of Apple programmers - that if you are creating a new MAIL account the first thing to do is create a new "internet account". When it sees that one exists, it errors out. Bzzt - wrong.
So the answer is to remove the regular "internet account" and create the mail account - which will make an internet account (see above). Then add other services you might need such as messaging or calendar.

Read all before starting.
Open the Keychain Access App in Applications/Utilities
Select Login top left if it is not.
Select Passwords lower left if it is not.
In the right hand pane find the com.apple.account.Google.oauth-token item.
Delete this.
Before opening Messages go to the Google site and your Accounts settings and enable in the Security section "Allow Less Secure apps".
Messages (and Mail for that matter) use SSL to login.
Google have deemed this "Less Secure".
However their mail server seems to allow SSL Logins (presumably from a wide range of windows and other platform clients as well as Apple's Mail and iOS Mail).
I found once I had done this I had full access to the Messages account I had created. (I was not looking at altering the Mail login that was working).
However I had lost the SMTP server entry and was able to get that back as part of this process.
It was the fact my Google account in Messages looked logged in but could receive or send and then on top of that the Mail app wouldn't send Google Mail items that made me sort it out.
I am suggesting it may help in your case.
