My new iPhone came in today. This is my first time ordering online with Apple and having the phone shipped to me rather than going into the carrier store, buying and activating it there. Will the phone already be activated with my number or do I call my carrier after getting all of my content restored to it from iCloud and activate it that way?

Depending on the carrier, you'll have to insert your SIM card and then start up the phone and the setup process will begin.

Remove the SIM card from my current iPhone and put it in the new one? I never had to do that when going from my previous iPhone to the one I've had up until now. I'm on Sprint.
In that case, check the sprint link from above, their webpage has detailed info about activating your device.
