Q: Can I back up only certain things with an iTunes backup? I want to back up only the important stuff (mail, notes, contacts etc, not photos, videos, music etc.). It's necessary since I have a 64GB iPhone 5 and want to change to a 16GB iPhone 5.

    No.  its all or nothing with back ups About backups in iCloud and iTunes - Apple Support

     

    Your mail doesn't need to be backup since everything resides on your email server.

     

    What email or icloud service are you syncing your notes and contacts to?

    Note that backups don't include certain items such as photos, music, videos. Those are synced and should already be on your computer.  This should keep the size of the restore fairly small.

    Music and apps are not part of a backup, so don't count them in the size of the backup. The easiest way to achieve what you want is to delete everything that you don't want on the iPhone 5 from the iPhone 4, then back it up. You will then have a backup that can be restored to the iPhone 5.
