I have been doing a lot of overseas traveling recently and I notice that my iPhone will update the time when I get off the plane, but the apple watch (which is meant to be synced to the iPhone through bluetooth) does not update to the correct time!! This sounds like a software bug!!

If the time on your watch does not update automatically, a normal restart should suffice: press and hold the side button until you see the Power Off slider; drag the slider to turn off; then press and hold the side button until you see the Apple logo.
I've traveled through multiple time zones with my Apple Watch and the watch always had the correct time. Try resetting the watch. Push and hold simultaneously the Digital Crown and the Side Button until you see the Apple logo. Then let the watch restart.
