Mac G5 + Dell Monitor

So you're running it at 1920 x 1200 and it's still fuzzy, right? The first thing I'd check is to see what revision of the monitor you have. It should be listed on the back of the monitor, or you can likely find it in one of the on-screen menus. If it's an early revision (such as an A00 or A01) then the fuzzy text and banding in color gradients is a known issue. It's the primary reason I purchased a 2405FPW even though the 2407 was right around the corner. Reportedly, the A02 and A03 revisions of the 2407 are much better (if not completely fixed) with regard to the fuzzy text and banding. You may need to contact Dell to get your monitor updated or replaced if you have one of the early models.

Please confirm that you've got it set to 1920 x 1200 in the Displays preference pane.

Also, you're using the DVI connection and not the VGA connection, right?

You may need to check some of the display modes on the monitor's on-screen display, provided that the above items are set up correctly.

I suspect that it's a problem with the Dell, most 3 party monitors should work with Macs, but a few don't play nice!

Try pushing the 'Detect Displays" in the display panel of system preferences.
