The following has information on how to delete backups and other data from iCloud: Manage your iCloud storage - Apple Support

You can sign out of iCloud on an iPhone by going to Settings > iCloud and scroll to the bottom and tap "Sign Out."

On a Mac: Apple menu > System Preferences > iCloud > Sign Out

On a PC: Open iCloud For Windows and click Sign Out

Thanks FoxFifth for the information. Since there have been so many new additions concerning iCloud to the most recent OS and iOS. The document I was using was old and left out some steps. Your help was 'right on'. Thanks
