I Tried to slide over from the right side of the screen to open two apps at a time. The guy in the store did it but I'm having trouble doing this.

Not all applications have been updated to take advantage of Slide Over and/or Split Screen, as yet.
Try starting your swipe from off the screen, mid-way up the page.
