What is the best way to bounce my project without getting all the extra silence at the end of the file? Should I "select all" tracks before I bounce?

You've set the end point correctly in the bounce dialog.
Do not check "include reverb tail". If you want the reverb tail set the endpoint a little past the actual endpoint of the music.
In the environment window click the upper-right corner past where your project wavelength is and grab the end marker triangle. The curser will change to a an icon with this shape basically: <[> when it does, start dragging to the left, all the way to where your longest track ends. Then when you go to bounce, make sure it reads Start: 111 1
It's good also to have the free Audacity app so that you can check to see how the bounced file looks before exporting to final format and then do any quick last minute fades or filters.
