How do I start a new track in Garageband 10 in stereo?

I'm trying to record a new "real instrument" track in stereo, but I can't change the track from mono to stereo unless I load up an old user made instrument setting. I've opened up the smart controls, I've clicked the "i" inspector button, but there aren't any options to change track from mono to stereo.
Yes it is a stereo microphone.
Yes my interface allows for stereo tracking.
Yes I've used the same setup for tracking in stereo previously.
For whatever reason, it just automatically switched to mono yesterday and I can't find the options to change it back.
I've googled for it, scrounged around youtube, and browsed several forums, but very few people mention it being an issue.

I'm using garageband 10.3 witha presonus audiobox usb interface, using an xlr cable and a Shure sm7b microphone.
