When my macbook pro starts up, activity monitor also launches.

How are you closing Activity monitor? If you want it closed, select File -> Close... do not click the red dot in the corner of Activity monitor's window.

Activity monitor is not listed in the Login items.
I have been closing by clicking on the red X button.

This must be something very simple.
Clicking the red X button does not close Activity monitor... nor any application on your Mac.
If you want to close ANY application on your Mac, go to the File menu and select Close.
