iPod touch no longer syncing & album artwork disappeared

My iPod touch (5th gen) synced 2 weeks ago without any problems - but today it suddenly won't transfer over any of the music I downloaded over the last week or so... and when I tried to sync suddenly all of my album artwork disappeared from my iPod too...

I'm on the latest version of iTunes & my iPod, (I updated my iPod today when it wouldn't sync originally thinking that might be the problem, but clearly not as it hasn't worked...

I had this problem before and turning off iCloud worked then for me - but it's still off and now I'm running into the same issues. I don't want to reset my iPod as so many suggest just in case nothing copies over at all and I'm left with an absolutely useless device. Not exactly happy here, does anyone know how to fix this?
