Do apps in itunes use RAM?
All my apps from iphone and ipad are also in itunes. Why are they there? Can I delete them from itunes and will it increase my available RAM?

They do not use any RAM but don't confuse RAM with hard drive space. They do use hard drive space as any file storage will.

What is the purpose of having them on the hardrive if you already have them in your iphone and /or ipad?
Think I know the answer to that question. If your iphone failed, or you got a new one, you can transfer all your apps from your computer to your new phone and not lose them
