POP email account no longer working with hotmail on my iphone 6S

This stopped working as of 2 days ago. When I deleted my email account and recreated a new one, I was only able to create an IMAP account (POP was not an option). This has been incredibly frustrating because I like to keep a copy of my emails on the server and not have them delete when I remove the email off my iphone. Anyone else experiencing the same thing? Any solutions/advice would be much appreciated. Thanks.
