iOS multitasking

ios multitasking. I stopped by a local Mac dealer to try out the new iPad pro and found that I was unable to have two numbers documents open using multitasking. Is this possible? This feature is essential for my line of work. Every four weeks I repeat the same jobs and often copy and paste work from one week to the next with a few variants here and there. In order for the iPad pro to fill my work needs I need to have two numbers documents open simultaneously And be able to copy and paste between them.
