How to, when no internet; put "notes" "SMS" on another iPhone?

from iOS9.2 to iOS8.4

backup one phone to itunes. restore that backup to other phone.

Restoring the backup of the1st iPhone on the 2nd is mis accomplished since iTunes/restore backup displays last created backup for iPhone name rather than choosing another saved file.
