Any way to unsync after syncing to iTunes?

No not unless you made a back up of your current data, otherwise those recent pics are gone.
I plugged in my new iPhone for the first time, but when I synced it with what I thought was my up-to-date iTunes, my entire phone reverted to exactly how it was in October on what I guess was my last successful back up, so I lost all of my recent pic
